Every fold carries thirty-five years of memory. Each card below is a chapter in how a grandmother's technique became a table worth reserving.

Grandmother's Hands

Nanxiang, Shanghai

Chen Lihua learned the eighteen-pleat fold from her mother on a wooden board worn smooth by forty years of dough. The fold isn't decorative — each pleat traps a pocket of air that collapses under steam, pulling the skin tight around the broth.

The original Fold was six stools at a kitchen counter. No menu — just whatever was steaming. The line formed before the door opened.

Every Filling, a Decision

Classic pork & ginger. Black truffle & wagyu. Crab roe in season. Dessert: osmanthus & wolfberry. The skin never changes. The broth never changes. Everything else is curiosity.

Counter Seats

Eight seats facing the kitchen. Watch each dumpling folded through the glass. The closest you can get to the craft.

Private Steamer Room

A room that seats up to twelve, with its own bamboo steamer trolley and a dedicated server who knows every filling by heart.

6–12 guests

Courtyard

Weather permitting. Stone lanterns, jasmine overhead, and the sound of the kitchen through a wooden screen. For evenings that should last longer than they do.
